1991 SN. 351 with 1.23/1 trans. Is this standard or reverse rotation? And how do I tell the difference? Also, I a$$ume it is 240hp. Is this correct? Thanks for any input...

79 is right on. You should have the base motor, as I dont think the ProBoss became an option until '92. The rating is either 240 or 255, depending on whose literature you believe (CC or PCM),
