when I go to launch the boat, the back end keeps turning to the left - any ideas why?
Im guessing its the turn of the prop, but does this mean im not quite deep enough?
all ideas appreciated!

Are you talking about when you are in reverse? If that's what you are talking about, it is because when you are in reverse, the prop is pushing water away from the rudder (twards the bow of the ship). You don't usually have a lot of control in reverse.

yep, when reversing off the trailer. youre right, doesnt feel like im controlling it!

Use intermittant stabs of reverse only, else it will walk.

Kick the rear in the direction you with it to turn with a stab of forward.

Try putting the trailer in the water more so it takes less thrust effort.
