Quick thermostat repair question

I plan to replace thermostat (160) on my 1996 Sport GT-40.  Do I need to apply gasket sealant or just the dry gasket when I replace? (It's been a long time since i've done this).  

Background:  Overheat issue, replaced worn impeller...  Checked all hoses, cleaned filter (nasty hunk of seaweed), tightened all hoses.  Now, warm boat temp is around 125-130 under load, not much higher idling.  Went from too hot to too cool.   Should I be concerned?  Everything I read says 160-175 as normal operating temp for fuel injected.

Some sealant won't hurt.

Was your impeller missing any pieces?

If so you may find one or more pieces holding the thermostat open when you take the cover off.

Good point, the impeller was partially shredded, altho i've seen worse.  Will check that and let y'all know.
